Chicken Caesar Salad Sandwich: Recipe
This super tasty sandwich is packed full of protein, making it a perfect pre-workout option or simply something to enjoy for lunch.
You will need:
Iceberg lettuce
1-2 Spring onions
3-4 Baby plum tomatoes
1 x egg
Parmesan cheese Caesar salad dressing
Cooked chicken breast
2 x slices of bread (your choice)
What to do:
First, place the egg in a saucepan with boiling water and boil for around 5-6 minutes - for the yolk to still be slightly runny (boil for 7-8 minutes, if you prefer a hard boiled egg) - then remove from the heat, drain the boiling water away and add cold water to the saucepan, so the egg can cool.
Whilst waiting for the egg to boil, chop up the chicken, spring onion, tomatoes, and lettuce, and add to a bowl. Grate some Parmesan cheese and stir in some caesar dressing to combine.
Remove the shell from the boiled egg and add to the salad mix, breaking it up so the yolk coats the salad.
Place the bread under the grill, or in the toaster, until browned.
Top one slice with the salad mix and top with the other slice... enjoy!
